Marble Cupcakes

At the Library this week I found this little number. I let Lucas choose any cupcake and he choose Marble cupcakes with a chocolate ganache frosting. The frosting called for 1 1/2 pounds of chocolate. There was so much chocolate and just enough sugar to hold it all together.
Ingredients
Makes 16 cupcakes

1 3/4 cups cake flour (not self-rising), sifted
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup milk, room temperature
1/3 cup heavy cream, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1 cup granulated sugar
3 large eggs, room temperature
1 teaspoon pure vanilla extract
1/3 cup unsweetened Dutch-process cocoa powder
1/4 cup boiling water
Confectioners' sugar, for dusting

1. Preheat oven to 350 degrees F. Line standard muffin tins with paper liners. Stir together cake flour, baking powder, and salt. Combine milk and cream.

2. With an electric mixer on medium-high speed, cream butter and granulated sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. Add flour mixture in three batches, alternating with two additions of milk mixture, and beating until combined.

3. To make chocolate batter, measure out 1 cup batter, and transfer to another bowl. Combine cocoa and the boiling water in a bowl. Stir into reserved 1 cup batter.

4. Fill prepared cups with alternating spoonfuls of vanilla and chocolate batter, filling each three-quarters full. Run the tip of a paring knife or wooden skewer through batter in a figure-eight motion to make swirls. Bake, rotating tins halfway through, until tops are golden and a cake tester (i.e. toothpick) inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.

5. To finish dust with confectioners' sugar just before serving.




Yummy we loved them. P.S. If you are ever invited over to my house for FHE expect cupcakes I want to practice but don't want to eat them all myself.

My favorite things


 Lucas came home from work at 11:40pm. It had been a good but long week, it feels so good to have your best friend home with you.
Talking about Eternal Marriage and how our marriage has grown in the last two years. We also realized a funny thing! The summer before I started dating Lucas I made it my goal to date him. I told the right people so he would hear threw the grape vine that he had an admirer. It never realized how funny that sounded to him and how he could have easily made it harder for me to date him. He told me how with many other girls he liked or dated often he would build walls to not like them to protect himself when things wouldn't work out. But because of my funny goal and him hearing it before we actually started dating he treated me differently. I know that the Lord has a plan for us and he will help us in accomplishing all we are required to in this life.

Wednesday:Dreamy Cakes

This last month I took the Flowers and Cake Design class at Michaels.
I love what I learned it was fun fun!
The classes are still half off until May.
I have yet to take the Fondant and flowers class.
So if your interested let me know.


I made them for an activity for church.
It was called Blossom were your planted. We had fabric donated and made fabric flowers. We are going to donate them to the local Nursing Home to help brighten there day.

Tuesday: Walking Tours

 Wonderful downtown Logan. 
I remember the first time I drove into Logan I was so excited to enjoy a clean town with lots of character.
 I met a friend for lunch. I am hooked to this place. But if you are in a rush don't stop the owner/sandwich maker is a perfectionist.
 It's all about the #1
This is were we got our wedding rings. We recommended it to all of our friends.
We had a special ring that we had found online they found it and had it brought into the store for a great price!

Recap Lucas birthday

There was a request for a ninja cake.
He got a Halloween ninja cake.
I wanted it to be red but I didn't have enough red to make it red red. SO I thought I would add in some coco to make it darker bad idea, it turned it purple. Then I tried to use copper but it turned it orange.
So next time you want a solid red color just go to the store and buy a few bottles.

But the sword threw the cake was awesome!

My favorite things this week

Favorite things Lucas has been here!
He is off to Idaho again this week, we will miss him.
Today Mason and I went off to Women's Conference, it was wonderful to be with friends and be feed spiritually and with a yummy lunch. There were tons of left overs! So we brought home Costa Vita to our neighbors.  
On my way out of conference Lucas pulls up with new windshield wipers for my car, it was such a surprise that I needed. Not only was he doing something nice for me but he was dressed up in a collared shirt, cute butt jeans, his hair was done and he shaved. 
You see Lucas only does his hair once a week and I enjoy my Sundays! So it was a special day.


 We had Mason blessed earlier this month. It was a wonderful day!

Tuesday: Walking Tours

Over a year ago I graduated from Utah State University.
I am an Aggie threw and threw. Our doctor wore a BYU tie and my husband and I were like what are you doing?
The campus is so beautiful if ever you are on your way to Bear Lake for time on the blue waters spot and get some Aggie ice cream and take a walking tour of campus!
 The new HUGE agricultural building. Once I took a survey and one of the questions was how many cows are on you college campus. Funny enough I could answer the question 100+.

 The perfect building to make sure you look good. I've always wanted to sit on the inside during a busy time on campus and count the number of people checking themselves out.
 Hurray for blue skies we have a bad inversion in the winter so blue skies are literally a breath of fresh air
 The old ag building. This is the last place you want to be if there is an earthquake.
 A lost shoe recovered with the snow melt.
 Emily a friends use to work here we would make visits. Sad she left:(

Wednesday: Craft Time

 Visiting my mom a few weeks ago I raided her fabric closet.
We found some fun wild things and here are more of my creations!
 This is out of a fabric I made a blanket out of. 
The blanket was made up of large purple and blue squares with flowers. 
I cut them up in strips and tada!

What can I say I am a sucker for flowers

Tuesday: Walking Tours of Logan

Here we come Logan!
So the sun was out and it was a lair it was freezing.
We were only able to walk to our friends house down the street to deliver some coupons.
Here baby is on formula so we try and save any we find for there family.
Gross, crab apples frozen on the tree. 
I'm not going to lie I could smell it.
Sad signs of a summers past.
This is kind of like the people who leave there Christmas lights up until the 4th of July.
This sign remined me of a companion I had on my mission, she was sign speaking.
Anytime we found a sign like this we would knock all the doors to find the deaf child. Often the sign was outdated and the family had moved.

If I was a mailman this would be my favorite stop.

I'm sorry this wasn't the best walking tour we only made it to the Millers and back it was too cold. But be excited for more tours of Logan!
